Baked Moroccan Chicken, Couscous & Pineapple

Ingredients

1/4 teaspoon Cloves, ground

1/2 teaspoon Cinnamon, ground

1/2 teaspoon Cardamom, ground

1/4 teaspoon Cumin, ground

1/4 teaspoon Coriander, ground

20 ounces Chicken thighs, skinless

3 tablespoons +1 teaspoon unsalted butter seperated

8 Pineapple, slices, w/juice, canned

4 teaspoon Honey

1 cup Couscous, dry

1 and 1/3 cup Water

4 teaspoon Parmesan cheese

1 and 1/3 cup Beans, green, snap, unsalted, canned

1/4 teaspoon Garlic powder

Preparation

Combine ground clove, cinnamon, cardamon, cumin, and coriander.

Sprinkle evenly over chicken thigh and allow to marinate 15 minutes.

Bake at 350°F for 40 minutes or until juices run clear.

Melt 4 teaspoon butter and pour over pineapple, turning to coat. Drizzle pineapple with honey; sprinkle with cinnamon.

Bake at 350°F along with chicken, for 10 to 15 minutes or until thoroughly heated.

Prepare 1 cup couscous in 1 and 1/3 cup water; add 6 teaspoon butter and 4 teaspoon Parmesan cheese.

Sprinkle green beans with garlic powder heat in a small amount of water.

Serve chicken over coucous with green beans on the side.

Enjoy broiled pineapple for dessert.

1 serving is 5 oz chicken thighs (weight before cooking) 1/4 of the cooked couscous 1/3 cup green beans after cooking 2 pineapple sclices
