Grilled Salmon Caesar Salad

Ingredients

4 3/4 oz Skinless salmon fillets, preferably wild

Cooking spray

Salt and freshly ground black pepper

1 quart And 2 cups chopped romaine lettuce

2 tbsp Grated Parmesan

1 cup Croutons

1/2 Lemon, cut into wedges

2 tbsp Caesar Salad Dressing, recipe follows

Caesar Dressing

1 Cup

6 ounces Light silken tofu

1 teaspoon Anchovy paste or Worcestershire sauce

Juice of ½ lemon

2 tablespoons Grated Parmesan

1 Garlic clove

2 tablespoons Extra virgin olive oil

Salt and freshly ground black pepper

Preparation

Heat a grill or grill pan over medium-high heat and spray with cooking spray. Season the salmon with salt and pepper and place on the grill. Grill the salmon to desired doneness, 3 to 4 minutes per side for medium. Remove from the heat and set aside to prepare the salad.

Toss the lettuce and croutons with the dressing in a large bowl and season with salt and pepper. Divide among four plates and sprinkle with the Parmesan. Top each salad with one salmon fillet and serve with the lemon wedges.

Caesar Dressing

Combine the tofu, anchovy paste, lemon juice, Parmesan, and garlic in a blender. Purée until smooth and stream in olive oil. Thin the dressing with water to desired consistency. Season to taste with salt and pepper.
