Heat a grill or grill pan over medium heat and spray with cooking spray.
Combine the ground beef with the egg white, Worcestershire, garlic powder, salt, and pepper. Mix gently until all the seasonings are incorporated. Divide into four equal patties.
Grill the hamburger patties until they’re cooked through, 5 to 6 minutes on each side. Remove from heat and rest for 5 minutes.
While the burgers rest, toss the salad greens with the dressing in a large bowl. Divide among four salad plates.
Spread each burger with mustard and top with slices of tomato and onion. Wrap each burger in three lettuce leaves.
Serve one burger with one salad.
