Mix 1/2 of one can of enchilada sauce in cooked ground beef. Spoon 1/4 c of meat mixture into tortilla along with handful of cheese. Roll and place in casserole dish. Repeat until all meat is gone. Pour remaining enchilada sauce over top and top with remaining cheese. (may have about 1/3 can of enchilada mix leftover). Garnish top with jalapenos and olives. Bake 350 for approx 30 minutes. Serve with sour cream.
