Twice Baked Potatoes

Ingredients

2 Baking Potatoes

1 cup Plain Organic Yogurt

1/2 tsp Pepper

1/2 tsp Salt

1 tsp Garlic Powder

1/4 cup Soy/Veggie Cheese; shredded

Preparation

Preheat oven to 400 degrees.

Microwave potatoes on high for 10 to 12 mins. or until soft with punctured with a fork. Let cool.

Cut both potatoes in half. Remove flesh leaving about 1/2 inch around skin to hold the skin together. Place potato flesh in mixing bowl. (At this point you should have 4 potato skins.) Add yogurt, salt, pepper, garlic powder, and cheese. Mix until potato mixture is moist and looks like mashed potatoes. Fill potato skins with mashed potato mixture. At this point you can bake for 20 mins in preheated oven or freeze for up to 3 months.

This recipe recipe is just a base recipe. Try adding veggies like cooked spinach, broccoli, mushrooms, etc. Or try adding some bacon and chives!
