| 700g | Chicken Breasts cut into strips |
| 1 cup | (250mls) Light Evaporated Milk |
| 500mls | Apricot nectar |
| 2 tblsp | Cornflour |
| 2 tblsp | Tomato Paste |
| 1 | Onion diced |
| 425g | Can apricot slices |
| 1 tsp | Curry powder |
| 2 tsp | Chicken stock powder |
| 1 tsp | Coconut essence |
| 1 tsp | Garlic crushed |
Brown Chicken breast add all other ingredients. Allow to simmer while Rice or pasta cooks Serve immediately
Can use mangos instead of apricots, Replace both slices and nectar. Left overs are very nice the next day too!
