700g Chicken Breasts cut into strips
1 cup (250mls) Light Evaporated Milk
500mls Apricot nectar
2 tblsp Cornflour
2 tblsp Tomato Paste
1 Onion diced
425g Can apricot slices
1 tsp Curry powder
2 tsp Chicken stock powder
1 tsp Coconut essence
1 tsp Garlic crushed
Preparation
Brown Chicken breast add all other ingredients. Allow to simmer while Rice or pasta cooks Serve immediately
Cook's Notes
Can use mangos instead of apricots, Replace both slices and nectar. Left overs are very nice the next day too!
