Chicken Black Bean Wraps

Ingredients

1 tbs Olive oil

1 Onion

1 Sweet potato

1 Carrot or red pepper (optional)

1/2 cup Corn, frozen (optional)

12 oz Salsa, mild

1 Chicken breast, cooked

1 can Balck beans

8 oz Mozzarella or Jack cheese shreded

4 Whole wheat wraps

Sour cream, lite

Preparation

Dice oinon and saute in oil about 5 minutes

Peel and dice sweet potato and optional carrot. Add to onion. Coat with oil and saute 2 minutes. Add optional corn and 1/4 cup water and bring to a simmer. Cover and cook 15 minutes

Dice chicken breast

Rinse and drain balck beans.

Add salsa, chicken and black beans to vegetables.

Heat through, evaporating excess water as necessary.

Spoon mixture onto whole wheat wrap, top with cheese and roll. up wrap as burritto.

Top with sour cream
