Cashew Butter Chicken- thai

Trial and Error

This is our version of a thai dish

Ingredients

1 1/2 cup Cashew Butter (if you cannot find it in your store, just grind two cups of cashews with 1 tablespoon oil in food processor until smooth)

1 tablespoon Fresh minced ginger

1/4 cup Soy sauce

1 can Coconut milk

Juice of 1 lime and rhine

1 teaspoon Hot sauce, red pepper, any kind of heat (more if you're like me and like it spicy)

1 cup Chicken broth (used to dillute sauce, if you like it thick-omit)

1 teaspoon Finely minced garlic

Salt pepper to taste

Chives and cilantro for garnish(opitional)

6 Chicken breast. you can use left over chicken, the rotisorie ones from the super market, or grill, broil, chicken breast seasoned with garlic, lime, salt and pepper

Preparation

Combine all ingredients except chicken broth, chives , cilantro and chicken. Stir until smooth, add chicken broth until desired consistency is acheived.

We like to serve this sauce over celpephane noodles.

Lay chicken on top of noodles, pour chashew sauce, top with chives and cilantro.

Cook's Notes

I always make extra and freeze, then at the end of the week when I have those few peices of chicken or steak, I just boil some noodles and have a great quick meal.
