Easy Turkey Meatballs

This versatile recipe can be put together, cooked and ready to eat in 30 minutes. Foil lined pan makes for super easy clean-up! You can use Lean Ground Turkey (7% fat) or Ground Turkey Breast (1% fat). I imagine that other ground meats could be substituted.

Ingredients

1 1/2 lbs. Ground Turkey (Breast or Lean). 1 1/4 lbs. works fine with no changes.

1/2 c. Quick cooking oatmeal

1/3 c. Parmesan Cheese

1/4 c. Dried minced onions

1 t. Italian seasoning

1 t. Garlic powder

1/2 tsp Salt

1/4 tsp Ground pepper

1 Egg white. 1 egg, or approx. 1/8 - 1/4 cup egg product (egg beaters)

Seasonings can be adjusted to suit your taste.

*Spaghetti sauce for dipping

Preparation

Preheat oven to 400 F.

Line a large baking/jelly roll pan with foil and spray with non-stick cooking spray.

In medium bowl, stir together oatmeal, onion, italian seasoning, garlic powder, parmesan cheese and egg. Add ground turkey, mix to combine (using your hands works best). Form mixture into small balls, about 1-inch in diameter. For uniform meatballs, use a cookie scoop then roll to make round.

Place meatballs on a large baking sheet that has been sprayed with nonstick spray. Bake at 400 degrees for 12-15 minutes, until cooked through.

*Serve and enjoy!

Cooled meatballs can be frozen. Defrost or reheat in microwave.

*Can be served with cooked pasta and sauce, in sandwiches, sliced for pizza, or anyway you desire. Remember, seasonings can be adjusted to suit your taste or use.

Makes 20-24 Meatballs

Cook's Notes

Simmering in spaghetti sauce for 15 minutes, adds nice flavor to your sauce.
