Herbed Potatoes(Aloo Methi)

A nice simple recipe from my Grand Mom...

Try it....Very easy to make...

Ingredients

4 Medium Potatoes(Peeled&cubed)

1 cup Dried Fenugreek Leaves (Kasuri Methi)

1 Lg Tomato(Crushed)

1 tsp Each :

Ground coriander, ground cumin, turmeric powder, mango powder, garam masala and paprika

Salt to taste.

3 tbsp Oil.

Preparation

Heat oil in a pan, add turmeric powder. Quickly add potatoes and saute for 3 mins.

In a bowl add the fenugreek leaves and water, let it sit for 2 to 3 mins.

Squeezing the water out , add the leaves to potatoes along with all spices except mango powder and garam masala. Mix well with out letting the potatoes to break.

Add 1/4 cup of water and cover, Let it steam cook for 3 mins. The potatoes should be cooked all the way through. Remove from stove and add the rest of spices.

Voila...enjoy...
