Zesty Caponata Pizzas

Spicy and filling quick lunchtime meal.

Ingredients

1 (8 oz) package Individual pre-baked pizza crusts (two 6-inch crusts), split horizontally to make 4 rounds

1 c Canned small white beans, rinsed and drained

6 tbs Prepared caponata, chopped

2 tbs Sliced hot cherry peppers in vinegar, chopped

1 tbs Vinegar from cherry peppers

1 c Shredded light italian 4-cheese blend (mozarella, provolone, asiago, romano)

Preparation

1. Preheat broiler. Place pizza crusts, split side up, on baking sheet. Broil 4-5 inches from heat until golden, 30 - 60 seconds on each side.

2. Combine beans, caponata, cherry peppers, vinegar in bowl.

3. Tope each crust with a generous 1/4 c of bean mixture, spreading almost to edge. Sprinkle each with 1/4 cup cheese. Broil until cheese melts, about 1 minute. Serve immediately.

Cook's Notes

Caponata is a mixture of eggplant, onion, garlic, tomato, herbs, green olives. Can find it ready made in jars and cans at the supermarket.
