Cheddar, Chive, and Garlic mashed potatoes

Ingredients

1 lb Baby white or red potatoes, scrubbed

8 Garlic cloves

1/2 cup Reduced sodium chicken broth

1 cup Fat free cheddar cheese

1/4 cup Fresh chives

1/2 tsp Pepper

1/8 tsp Salt

Preparation

1. Combine in a medium saucepan the potatoes, garlic, and enough water to cover by 1 inch. Cover and bring to a boil. Reduce heat and simmer, uncovered until the potaotes are fork tender, about 15 minutes.

2. Meanwhile, microwave the broth until hot.

3. Drain potaotes and garlic/. Return to pan and smash with the cheese, chives, pepper, and salt.

1 serving = 2 points (3/4 cup)
