Healthy Tacos

Ingredients

1 lb Ground Turkey

1 can Low fat refried beans

4 cups Iceburg lettuce

4 cups Low fat mexican blend shredded cheese

4-8 Whole wheat burrito size tortillas

.5 cup Extra virgin olive oil

Preparation

1. Chop lettuce to the desired size

2. Brown the ground turkey. Drain

3. Heat refried bean on low heat

4. Heat oil in frying pan on medium high. Put a paper towel on to a plate (large enough to hold the tortilla shell).

5. When oil is heated, (Carefully! There will be oil splatter which can severely burn you.) set 1 tortilla shell into the pan. Wait about 20 to 30 seconds, lift with a tong and turn it over, re-setting it in the pan for 20 to 30 seconds. Lift with tongs and place on paper towel. Set another paper towel on top of the tortilla. Repeat with the next tortilla, setting it on top of the paper towel covering the cooked tortilla. Repeat until all tortillas are completed.

6. Place desired amount of refried beans (approx 2 tbsp) on a tortilla shell. Place desired amount of ground turkey (approx 2 tbsp) on top of refried beans. Sprinkle desired amount of cheese over the beans and turkey. Allow the heat to melt the cheese. Add lettuce. fold one end of the tortilla (about 1 inch) over the fillings. fold one side over the toppings and roll, leaving one end open. Enjoy.
