Duck, Duck...Chicken!

We use bottled, "Cantonese-style" Duck Sauce found in most grocery and/or Asian-food markets.

Ingredients

3-4 Boneless, skinless chicken breasts, cubed

Salt and pepper

1 tsp. Cooking oil* (optional)

1/4 tsp. Fresh ginger (refrigerated bottle or tube)

1/4 c. Duck Sauce

Preparation

Rinse chicken breasts and pat dry with paper towels. Cut into large, bite-sized pieces. Place in medium-large non-stick skillet, salt and pepper "to taste." Toss with oil* and ginger. Cook over medium heat until chicken is cooked thru (about 5-7 minutes). Remove from heat. Add duck sauce tossing with chicken until well-coated. Pour into shallow glass dish and place under broiler set on "Lo" for 5-7 minutes until chicken and sauce are sizzling. (Do NOT overbroil as chicken will dry out quickly.) Serve over steamed white rice or with rice pilaf.
