Cut head of lettuce into 1/4's to form "wedges." Do not seperate leaves, but wash and drain well. On individual salad plates, arrange wedges with "cut-side" up. Pour 1/4 of bleucheese dressing over each wedge. Sprinkle 1/4 of bluecheese crumbles, bacon, tomato and croutons on top of each wedge. Serve chilled and top with cracked black pepper if desired.
