Curry Chicken

Takes some time to make....but it sure is good and makes for great leftovers the next day.

Ingredients

2 Med. chickens (cut up) or family size pack of chicken legs and/or chicken thighs

2 Inches ginger root

4 Fresh Jalapenos (chop fine)

1 Small can diced tomatoes

8 Small onions (chopped)

1/4 cup Curry

2 t Tumeric

1 dozen Hard boiled eggs (optional)

Preparation

Saute onions, pepper & ginger in olive oil. Add tomatoes & spices. Cook 10 min. Add chicken. Simmer one hour, stirring often. Add 1 dozen hard boiled eggs. (This part is optional...I personally love having the hard boiled eggs in it...and it adds a lot of protein.) Cook 45 minutes longer.

Serve over steamed white rice.

I love this curry chicken. It smells so good when it's cooking and leftovers taste even better than the first time around.
