Strawberry Rice Salad

Ingredients

1 pkg. Strawberry sugar-free Jello (4 serv. size)
1/2 c. Boiling water
2 c. Crushed pineapple (2 8-oz. cans), undrained
2 c. Cooked rice (cold)
1 c. Cool Whip Lite
3/4 c. Vanilla or strawberry yogurt

Preparation

Combine dry gelatin and boiling water. Mix well to dissolve gelatin. Blend in pineapple with juice. Stir in rice. Let partiall set (about 1 hour). Stir in Cool Whip Lite and yogurt. Refrigerate for at least 1 hour.

Serving size = 1 cup.
