| 1 lb | Chicken thighs |
| 1 tbs | Olive Oil |
| 2 stalks | Celery |
| 2 | Large Carrots |
| 1 | Chopped onion |
| 1 can | Diced tomatoes (undrained) |
| 1 can | Chicken broth |
| 1 tsp | Italian seasoning |
| 1 small pkg | Frozen peas |
| 1 cup | Frozen egg noodles |
Heat olive oil in a skillet over medium heat. Add chicken and cook, stirring frequently for five minutes. Place chicken and remaining ingredients except peas and noodles in crock pot (will fit 3-4 quart pot). Ours is 7 quart so we double recipe. Stir gently. Cook on low for 6 hours, or until chicken is cooked. Stir in peas and noodles and cook 10 minutes.
