Apple Pancakes *Kids Favorite*

Simple apple pancake recipe. Healthy and great tasting kids breakfast treat

Ingredients

2 To 3 apples; cored, peeled, and sliced

Pancake mix follow directions for 4 servings

2 Tbls. sugar

1 tsp. Cinnamon

1 tsp. Vanilla

Preparation

Place prepared apples in a saucepan and fill with enough water to cover them. Boil until soft and browned. Drain water and mix with sugar, cinnamon, vanilla and pancake mix in large bowl.

Drop by 1/2 cup to 1/4 amounts onto slightly buttered frying pan or griddle until browned, flip and brown other side.

Cook's Notes

For added flavor substitute apple juice instead of water for the pancake mix. For a fun treat for the kids, use animal shaped metal cookie cutters in frying pan to drop pancake mixture into :) Fun to eat, and more managable for little hands.
