Garlic White Lasagna

I've prepped this the day before so all I had to do was put it in the oven the night I wanted to serve it.

Ingredients

1 1/2 pounds Italian Sausage (in casings)

4 Large cloves garlic, chopped

1 Medium onion, chopped

1 (12 ounce) jar Roasted red peppers, drained and chopped

1/2 cup White wine

1 (10 ounce) package Frozen chopped spinach

1 (15 ounce) carton Ricotta cheese

1/2 tsp. Salt

1/2 tsp. Pepper

1 Large egg, lightly beaten

1 (17 ounce Jars) Alfredo sauce

12 Lasagna noodles uncooked

2 (6 ounce) packages Sliced mozzarella cheese

1 cup Grated or finely shredded Parmesan cheese

Preparation

Remove and discard casings from sausage. Brown sausage in a large skillet over medium heat, using a wooden spoon to crumble sausage as it cooks.

Drain sausage, reserve 1 tablespoon drippings in skillet. Cook garlic and onion in reserved drippings over medium high heat until onion is tender. Stir in sausage and red pepper and wine. Bring to a boil; reduce heat and simmer 5 minutes or until most of the liquid has evaporated.

Meanwhile, cook spinach according to package directions, dranin and squeeze beween paper towel to reduce excess liquid. Combine spinach, ricotta, and next three ingredients. Stir well.

Spread 1 cup Alfredo sauce in a greased 9 x 13 x 2" pan. Top with 4 uncooked noodles. top with half of spinach mixture and half of sausage mixture. Place 4 slices mozzarella over sausage mixture. Repeat layers, using 1 cup sauce, 4 noodles, remaining spinach mixture, and remaining sausage mixture.

Top with remaining 4 noodles and mozzarella cheese slices. Spread remaining Alfredo sauce over mozzarella cheese and sprinkle with Parmesahn cheese.

Cover and bake at 350 degrees for 1 hour, uncovering during the last 15 minutes of baking. Let stand for 15 minutes before serving.

Cook's Notes

I don't trust not cooking the noodles so when I made this, I did boil the noodles before I put them in the lasagna. My crew also likes a little more meat that what this calls for so I used a combination of sausage and hamburger to make 2 pounds of meat.
