Baked Chicken with Mashed Potatoes & Gravy

Ingredients

3 - 4 Bone-in Chicken breasts
Garlic Salt
Pepper
3 Large russet potatoes
1/2 cup Sklm milk (more, if creamier potatoes desired)
Salt (to taste)
1 package Knorr Roasted Chicken Gravy mix
Water

Preparation

Chicken -

Preheat oven to 400 degrees. Remove skin from chicken. Place breasts in foil-lined baking pan, meat side up. Sprinkle garlic salt and pepper generously on them. Place in oven, bake for 50-60 minutes. (Chicken will be brown, juices run clear).

Mashed Potatoes -

Peel, rinse, and chop potatoes into chunks. Put in saucepan and cover with water. Bring to boil. Reduce heat to low, cover, and cook for about 15 minutes, or until potatoes are tender. Drain water. Dump potatoes into a mixing bowl. With mixer on lowest setting, mix until potatoes are broken up. Add skim milk a little at a time until the consistancy is how you like it. Salt to taste.

Gravy -

Follow directions on the Knorr gravy mix. Pour over potatoes and chicken. Note: Knorr gravy is FAT FREE and tastes better than anything I could make homemade.
