Chicken Parmesan

Minute Rice

Ingredients

1 tbsp. Oil

4 Sm. boneless skinless chicken breasts halves (1 LB)

1 Lg. chopped green pepper

14 oz. Spaghetti sauce

1 c. Water

2 c. Minute white rice, uncooked

1 c. Mozzarella cheese, shredded

1/4 c. Parmesan cheese, grated

Preparation

1. Heat oil in large skillet on med-high heat. Add chicken and peppers, cover. Cook 4-5 minutes or untill chicken is cooked through, stiring peppers occasionally. Remove chicken from skillet, cover to keep warm.

2. Add spaghetti sauce and water to skillet, stir, bring to boil.

3. Stir in rice, top with chicken. Sprinkle with cheeses, cover. Reduce heat to low, cook 5 minutes or untill mozzarella cheese is melted.
