Leslie's Chicken Salad

Ingredients

1 Rotisserre chicken

8 oz Pasta (penne/corkscrew)

3 stalks Celery,chopped

1/2 can Black olives

10 Green olives

1 Bell pepper (jalapeno, if you like it hot)

1/2 lb Cheddar cheese, cut into cubes

2 tablespoons Chopped parsley or cilantro

1/3 cup Italian dressing

Salt and Pepper to taste

Preparation

Make pasta following directions on package, you may want to shorten the cook time by a few minutes for firmer pasta.

Debone chicken. Freeze chicken breasts to use later in the week for another dinner.

Cut the chicken into cubes.

Chop celery, olives, pepper, cheese and parsley.

Combine iItalian dressing with, cooked cooled pasta, chicken cubes, celery, olives, pepper, cheese and parsley.

Add salt and pepper to taste.
