Ingredients

24 Items Quaker Oats (U.S.) Quakes Crispy Mini's Rice Cakes Cheddar, (aka Quaker Crispy Mini's Rice Cakes - Cheddar)

2/3 cup Salsa, medium or hot, well-drained

3 tbsp Canned jalapeño peppers, chopped, or to taste

1/2 cup Low-fat shredded cheddar cheese

1/4 cup Guacamole

3 tbsp Fat-free sour cream

Preparation

Preheat oven or toaster oven to 400°F. Arrange rice cakes close together on a baking sheet.

Spoon well-drained salsa over rice cakes. Sprinkle with jalapeno and cheese.

Bake until cheese is melted and nachos are heated through, about 10 minutes. Spoon guacamole and sour cream over nachos. Serve warm. Yields 6 nachos per serving.
