Ginger Tilapia

Easy to make baked fish for simple, healthy dinner.

Ingredients

3 tbsp Lime Juice

1 1/2 cup Ginger, garlic sauce (found in the Asian section)

3 cups Fresh spinach leaves

2 tbsp Basil

4 Fillets of tilapia

Preparation

- Preheat oven to 400.

- Prepare on counter tin foil large enough to loosely wrap each fillet.

- Place 1/4 cup of spinach leaves in the middle of each foil piece.

- Place fish on top of spinach leaves.

- Squeeze lime juice over each piece of fish.

- Pour ginger sauce over each piece of fish.

- Sprinkle Basil on each piece of fish.

- Wrap foil loosely around fish until securely closed and place in a shallow baking dish.

- Bake for 20 minutes or until done.

Cook's Notes

Excellent served with wild rice and other grilled veggies. If I can't find ginger sauce seasonsed with garlic, I sprinkle sauce over fish with garlic powder. Can make ahead, wraped in foil, refrigerated and cook right before ready to eat.
