Carrot Puree with Lentils and Cheese

Ingredients

1/2 cup Finely Chopped Onion

1 1.2 tsp Olive Oil

2 tbs Red Lentils

3 Medium Carrots, Peeled and Sliced

1 1/2 cup Boiling H2O

1 tbs Unsalted Butter

2 Tomatoes, peeled, seeded and roughly chopped

1/2 cup Grated Cheddar Cheese

Preparation

In a sauce pan, Saute' the onion in the olive oil until saofteded (3-4 min) Rinse the lentils and drain and add the onion. Add the carrots and pour in the boiling H2O Bring to a boil then over and cook over medium heat for 25 min. Melt the butter in a sauce pan and sautee the tomatoes until mushy (2-3 min) then stir in the cheese mixture in a food processor and puree the a medium consistency.
