1/4 cup Chopped Onion
1 tbs Unsalted butter
1/4 cup Long grain rice
1 1/4 cup Boiling H2O
1 Carrot, peeled and sliced
3 Tomatoes peeled, Seeded and diced
1/2 cup Gratted Cheddar Cheese
Sautee the onions in half the butter. Stir in the rice until well coated add the carrots. Pour in the boiling H2O and bring back to a boil. Cover and simmer until rice and carrots are cooked about 15-20 min. If needed add extra water. meanwhile heat the remaining butter add the tomatoes and sautee until mushy 2-3 min. Stir in the cheese until melted. The H2O from the rice should be gone if not drain. Stir in the tomatoes and cheese.
