Mexican Breakfast Burrito

Quick & Easy Breakfast for someone on the go!

Ingredients

Cooking Spray (Canola Oil spray)

2 Eggs; plus 2 Egg White's

Splash Skim Milk

1/4 tsp Hot Sauce

Salt & pepper

1 tbsp Bell Pepper, diced

1 tbsp Tomato, diced

2 oz Low Fat Cheese (recommended Spicy pepper cheese)

2 Whole Wheat (No Enriched Flour) Tortilla's

Preparation

Spray skillet with Cooking Spray. Heat skillet on medium heat and add the bell pepper. Cook until soft and a little carmelized.

Meanwhile, beat the egg and egg white's with the milk and hot sauce. Add salt and pepper.

Add tomatoes to the pan with the bell pepper. then add egg mixture and cook until eggs are light and fluffy. Add shredded cheese to eggs. Take the pan off the burner and let cheese melt. Mix egg mixture together then divide this b/w the tortilla's. Roll tortilla's into burrito shape. Serve immediately!

Cook's Notes

This is a wonderful breakfast. With all the protein this should keep you full and satisfied until lunch....well at least until sanck time! Try adding fresh fruit for a well balance breakfast.
