Fried Rice

A ahhhh I"m starving quick meal for the nutritionally concious.

Ingredients

1/2 cup Cooked brown rice

1 cup Spinach, cut into fine strips

1/2 cup Tomato, diced

1 stalk Celery, sliced

2-3 Egg whites

1/2 tsp Turmeric

Garlic powder, to taste

Onion powder, to taste

Black pepper, to taste

Cooking spray

Preparation

Wash and slice veggies. Heat small skillet to medium. Spay pan with no-stick spray. Place onions and celery in pan and cook until onions are almost transparent, stiring frequently. Add tomatoes and spinach, cooking until spinach volume reduced to half. Add rice to mixture. Add egg whites to mixture, stiring constantly until cooked through. Add Turmeric, garlic powder, onion powder, and black pepper to taste.

Cook's Notes

This makes a great base for getting rid of left over chopped veggies. You may also add small bits of cooked meats or veggies at the end of the cooking process if you have them on hand. You may also substitute noodles for faster prep if you don't have cooked rice on hand!
