Potato Soup

Very nice creamy textured soup

Ingredients

5 Large potatoes, baked

1/4 cup Butter

1 Medium onion, chopped

1/3 cup Flour

4 cups Half-n-half

3 cups Milk

1 tsp Salt

1/8 tsp White pepper

2 cups Cheddar cheese

8 Bacon slices, cooked & crumbled

Preparation

1. Peel potatoes and coarsely mash with a fork.

2. Melt butter over medium heat; add onion and saute until tender.

3. Add flour, stirring until smooth.

4. Stir in potatoes, half-n-half, milk, salt and pepper. Cook over low heat until thoroughly heated.

5. Top each serving with cheese and bacon.

Cook's Notes

You can choose to mash all the potatoes or leave some chunks and some mashed. This is the way I prefer it.
