Preheat oven to 425.
In a large bowl, whisk together egg, garlic and 1 tbs water. Add potatoes, tossing to coat.
In a shallow dish, combine bread crumbs, parmesan cheese, basil and oregano.
Roll potato wedges in mixture to coat and placed on a greased baking sheet.
Bake 15 minutes; turn wedges and bake 15 minutes more or until potatoes are tender.
