Light Penne with Zucchini
Preparation
Cook pasta and keep warm.
In a skillet, heat oil over medium heat.
Add garlic, mushrooms, onion and spices.
Cook, stirring often, 5 minutes or until onion is softened.
Stir in tomatoes, zucchini and red wine vinegar; reduce heat to medium.
Cook, stirring often, 10 minutes or until zucchini is tender.
Stir in cream cheese until blended.
Toss pasta with sauce.
