Chinese Chicken Salad

Ingredients

1 Large Napa Cabbage ~ diced

3 packages Teriyaki Ramen noodles ~ uncooked and broken into bit-sized pieces

Dry roasted peanuts

Green onions ~ chopped

3 Teriyaki chicken breasts ~ sliced into ¼ inch strips

Dressing:

Ramen seasoning

¼ cup Peanut oil

1/3 cup Rice vinegar

Chili oil (to taste)

3 tbsp Sugar

Salt and pepper (to taste)

Preparation

In a large skillet, over medium high heat, brown chicken until there is no longer any pink inside. Remove to a plate and put in the refrigerator to cool.

In an extra large bowl, combine cabbage, Ramen noodles, dry roasted peanuts, green onions and cooled chicken.

In a small bowl, whisk together all the dressing ingredients. Immediately pour over the cabbage mixture. Toss until well-coated.

Serve with warm, crusty, French rolls.
