Beef and Spinach Enchiladas

Ingredients

1 lb Ground beef

2 Garlic cloves, minced

11/2 cups Frozen cut spinach

4 oz Cream cheese, cut into 1-inch cubes

1/2 tsp Ground cumin

1 can (4.5 oz) chopped green chilies

2 cups (8 oz) shredded Monterey Jack cheese

8 8-inch tortillas

1 can (8 oz) tomato sauce

1 cup Salsa

Preparation

1. Heat oven to 350 degrees F. Spray 13x9-inch (3quart) glass baking dish with cooking spray. In 12-inch skillet, cook ground beef and garlic over medium-high until beef is thoroughly cooked; drain.

2. Add spinach; cook 3 - 5 minutes or until spinach is thawed, stirring frequently. Reduce heat to medium; stir in cream cheese, cumin, chilies and 1 1/2 cups of the cheese until combined. Spoon about 1/3 cup beef mixture down center of each tortilla. Roll up; Place seam side down in baking dish.

3. In medium bowl, mix tomato sauce and salsa. Spoon over tortillas; sprinkle with remaining 1/2 cup cheese.

4. Bake 20-25 minutes or until thorouhly heated.

Cook's Notes

HIGH ALTITUDE (3500-6500 ft): In step 4, spray piece of foil with cooking spray; cover baking dish with foil. Bake 40-45 minutes. We are at 4200 and I have no problems with the regular directions.
