Chicken King Casserole

A Pinch of This, A Dash of That

A quick & easy recipe that is great for leftover chicken.

Ingredients

6 Boneless chicken breasts halves

4 oz. Bowtie pasta

10-3/4 oz. Can cream of broccoli soup

10-3/4 oz. Can creamy chicken mushroom soup

4 oz. Can mushroom stems and pieces, drained and rinsed

1/2 c. Milk

16 oz. Carton sour cream

1 c. Frozen peas

1 Sleeve saltine crackers, crushed

2 t. Butter, melted

1/4 t. Dried parsley

1/4 t. Galic powder

1/4 t. Salt

1/4 t. Celery seed

Preparation

Boil chicken until thoroughly cooked, cut up and place in a large mixing bowl, set aside. Cook pasta according to package directions, drain and rinse. In a medium mixing bowl, whisk together soups, mushrooms, milk, sour cream, and peas. Combine crackers and butter well. Spread 3/4 of the cracker mixture over the bottom of a 13 x 9" baking dish. Layer chicken, pasta, and spices. Pour soup mixture over pasta layer, sprinkle with reserved cracker mixture. Bake 350 degrees for 30-40 minutes or until thoroughly heated.

Cook's Notes

Serve with salad or coleslaw and warm bread. For my family of 3 I divide in half and freeze for later.
