Vegetable Soup

Easy to make

Ingredients

1 Lg onion, diced

1 tsp Garlic, minced

1 tbsp Canola oil

1 lb Lean lean ground beef or gound white meat turkey

1 32oz Jar V8 juice

2 14oz Cans beef (can be low salt)

1 14oz Can diced tomatoes

2 16oz Bags frozen mixed vegetables

To make this recipe vegetarian use the following -

2 cans Beans any kind - in place of beef or turkey

2 14oz Cans vegetable stock - in place of beef broth

Preparation

Heat a soup pot over medium heat. Add the ground beef and brown. Remove and drain the ground beef. Heat the oil in the pot over medium heat. Add the onions. Saute' until they are translucent, then add the garlic. Saute' just a couple more minutes, so the garlic does not taste raw. Add the tomatoes, ground beef, beef stock, and V8 juice. Bring to a simmer over medium-high heat. Add the mixed vegetables. Return to a simmer and let simmer over medium-low heat for 45 minutes.

Cook's Notes

This soup can be made vegetarian by substituting vegetable stock for beef stock. I would substitute beans for the ground beef. You can also substitute ground white meat turkey for the ground beef for a low-fat recipe.
