Black Bean Burritos

Ingredients

1 lb. Black Beans, Dryed

2 tablespoons Olive Oil

1 Onion, Large, Chopped

6 cloves Garlic, Grated

1 Jalapeno Pepper, Chopped

12 oz. Pepper Jack Cheese

12 Burrito Wraps

Preparation

Combine all the ingredients except the pepper jack cheese and the burritos in a crock pot. Cover with water and cook on high untill the beans are tender. With a hand held mixer blend the beans until smooth. Add the pepper jack cheese and mix until cheese melts.

Fill each burrito with 1/2 cup of bean mixture, wrap and freeze.
