Ingredients
1 lb. Red Kidney Beans, Dryed
2 tablespoons Olive Oil
1 Onion, Large, Chopped
6 cloves Garlic, Grated
1 Jalapeno Pepper, Chopped
12 oz. Pepper Jack Cheese
Preparation
Combine all the ingredients except the pepper jack cheese in a crock pot. Cover with water and cook on high untill the beans are tender. With a hand held mixer blend the beans until smooth. Add the pepper jack cheese and mix until cheese melts.
Put refried bean mixture in clean steril Mason Jars. Pressure cook for 15 minutes @ 10 pounds of pressure.
