Directions
1. Place pan with salted water on stove and begin to heat.
2. Wash and cut the cauliflower into even size pieces, approximately 1.5 inch cubes.
3. Add to salted water and boil until fork tender, then drain thoroughly.
4. Turn on oven and preheat to 350 degrees
5. Place cooked cauliflower in bowl and "mash" with a mixer. Add butter, sour cream, salt and pepper to taste.
6. Pour mixture into an 8" round baking dish or equivalent size.
7. Cover with shredded cheese. We like Colby-Montery Jack mix.
6. Place uncovered in over and bake until cheese is melted and bubbly.
7. Remove from oven and let set a few minutes, serve and enjoy!
