Totrilla Baked Fish..OLE'

South of the border twist on fish...

Ingredients

6 "Thinnish" filets of your favorite fish (boneless)

2 cups Crushed Tortilla corn chips

1/4 cup Cornmeal

1 tsp. Taco seasoning

Melted butter

1/4 c. Thinly sliced green onions

1/2 c. Shredded cheddar

Your favorite salsa

Preparation

Crush the chips in a bag till crumbly,

add the cornmeal and seasoning.

Moisten with water first and then...

Dredge the fish in the mix and lay on a very shallow baking pan...make sure you spray it with non-stick spray! I have discovered the non-stick foil...I use it all the time.

Drizzle the melted butter over the filets and BAKE unitl nearly browned and crispy.

Maybe...30 minutes or so...your oven will decide.

Pull the pan out put the shredded cheddar over the fish...lightly.

Put back in oven for about 5 minutes until the cheese is melted.

Remove from the oven and garnish with the salsa and green onions.

This goes great with GARLIC FRIED POTATOES and CORN on the COB.

My family is not "into fish" but they really like this recipe.
