| 1 | Onion, peeled and quartered |

Toss potatoes, onion and peppers in olive oil. Put more olive oil in the bottom of a pan. Poke holes in sausages. Roll sausages in olive oil to coat. Sprinkle one side liberally with seasonings; roll potatoes and sausages over; sprinkle again. Top with onions and peppers. Bake, uncovered, at 375 for 1 hour, or until peppers are blackened.
