Scallops and Calamari in Red Sauce over Rice Pasta

Contributed By: jgoodsen
Myself

Pick a rice pasta (no wheat gluton) - I like rice spaghetti. Cook it up - need instructions do you? I think you know the drill. Grab a jar of decent spaghetti sauce or make your own from scratch (I'm a batchelor, so some of the minor items like spaghetti, I like to outsource - especially since I'm gonna spice to my liking anyways before I'm done - if I'm cooking for others I won't skimp like that)

Ingredients

2 tbs Olive Oil, heat in pan.

1 clove Garlic, thinly sliced.

1/3-1/2 lbs Bay Scallops (the small ones)

1/4 lbs Sliced, fresh calamari

16oz Spaghetti sauce - store bought or home made

Parmesan cheese - fresh

Preparation

Cook rice pasta until ready to serve and strain. Cover to keep warm.

Heat olive oil over medium-hot flame for 2 minutes. Add garlic and cook for 1 minute. Add scallops and calamari and cook for a few minutes until done.

Add spaghetti sauce to pan and heat until it simmers.

Pour over pasta and grate fresh Parmesan on top. Drink with a white wine, chardonnay.

Cook's Notes

Low carb, healthy rice pasta meal.
