Broiled Salmon with Tomatoes, Basil and Mint

Ingredients

4 Salmon fillets (6-7 ounces each)

1 Sliced onion

2 Ripe tomatoes, diced

5 tablespoons Extra-virgin olive oil

3 tablespoons Soy sauce

2 tablespoons Lemon juice

1 1/2 cups Fresh basil pieces

2 teaspoons Finely chopped fresh mint

1/2 teaspoon Cracked black peppercorns

Preparation

Preheat broiler.

Combine tomatoes, oil, soy sauce, lemon juice and herbs. Cover and let stand 30-40 minutes.

Brush 4 salmon fillets with 2 T olive oil. Put fish on broiler pan with 8 1/8-inch thick slices of onion on top.

Broil 8 inches from heat for 12-15 minutes.

Remove. Spoon tomato salsa on top.

Cook's Notes

Can substitute dried spices but it tastes much better with fresh herbs.
