Baked Dijon Chicken

Excellent baked chicken recipe -- you can bake with homemade beer-batter bread (included).

Ingredients

Dash of milk
3 t Dijon mustard
Salt & pepper to taste
1 c Fine dry bread crumbs
1/4 c Shredded parmesan cheese
4 Boneless chicken breasts

For Bread:
3 c Flour
3 teaspoons Baking powder
1 1/2 teaspoons Salt
3 tablespoons Sugar
1 12 oz Can of beer

Preparation

Preheat oven to 375 and mix bread first:

Combine flour, baking powder, salt, and sugar. Stir with fork. Pour beer in slowly, stirring with fork. Mixture will make a thick and chunky dough. Turn into a greased loaf pan and put in oven for 1 hour.

Pat chicken breasts dry. Salt (just a little) and pepper (more) them. Whisk mustard with milk. In a separate bowl, mix bread crumbs and parmesan cheese. Dip breasts in the mustard/milk mixture and dredge in the cheese/bread crumb mixture. Place in lightly greased baking pan and bake for 45 minutes or until done (depending on the thickness of the breasts, this could be done sooner).

Cook's Notes

I serve this with a salad and a side of broccoli.

Chicken was great!!! The bread turned out really hard but I used whole wheat because I was out of regular flour.

My family loved this chicken. I had to broil it for about 10 minutes to get the coating to brown. Very tasty!
