Ingredients

2 cups White wine

2 cups Water

4 stalks Green onion (including green part), diced

1 lb. Mild-flavored fish fillet or loin (such as cod)

Preparation

Combine wine, water and green onion in a large skillet. Bring to simmer. Add fish; cover and simmer about 5 to 10 minutes. Turn fish, cover and continue simmering until fish is opaque and flakes easily at its thickest point, about 5 - 10 minutes, depending on the thickness.

Cook's Notes

When preparing this recipe, use an oaky white wine; I like the flavor it imparts to the fish. Experiment with any wine. Or you can substitute chicken or vegetable broth for the wine.
