1. in a bowl, stir together breadcrumbs, flaxseed, parmesan, & paprika. set aside
2. in a shallow bowl, mix puree and egg with fork
3. slice tofu 1/2 inch thick and cube it or cut into shapes with cookie cutter. Sprinkle both sides with salt. Dip the tofu pieces into the puree mixture, then roll them in the breadcrumbs untill the tofu is completely coated and you can't see the puree.
4. coat large nonstick skillet with cooking spray and set over med-high heat. When pan is hot add oil.
5. add the tofu nuggets in a snigle layer do not crowd. cook untill nicely browned and one side 3-4 minutes. turn and cook until the crumb coating is crisp and golden 2-3 min longers.
