Black Bean Tamale Pie

We love black beans and cornbread -- it's a great combo for a yummy dinner

Ingredients

1/2 lb. Ground beef

1/2 cup Chopped onion

1/2 cup Chopped green pepper

1 can Black beans

1 cup Salsa

1 pkg. Corn bread mix (8.5 oz.)

2 cups Grated cheese divided

Sour cream and garnish

Preparation

Cook beef, onion and green pepper. Add beans and salsa. Mix corn bread and bake at 375 for 5-6 minutes. Spoon beef mixture over cust leaving a 1/2 inch edge. Bake 15-18 minutes more til golden brown. Sprinkle with cheese and bake until melted. Serve with sour cream, olives, tomatoes & lettuce.

Cook's Notes

To avoid a mess in the oven, take corn bread out of oven before spooning beef mixture on top, then return to oven.
