Chunky Chicken and Veggie Soup

Ingredients

2 tsp Olive oil

4 Boneless skinless chicken breasts cut into cubes

1 Green pepper, chopped

3 stalks Celery, chopped,

3 Green onions, sliced,

4 cups Chopped cabbage

4 cups Low sodium chicken broth

2 cup Water

2 Chopped carrots

1 Small chopped turnip

1 tbsp Chopped parsley

1 tsp Dried thyme leaves

Pepper to taste.

Preparation

Heat oil in large saucepan over medium-high heat. Add chicken; cook and stir 4-5 minutes or until no longer pin. Add bell pepper, celery, onions and cabbage. Cook and stir 7-8 minutes. Add remaining ingredients; simmer 15-20 minutes or until veggies are tender.
