Spinach Burritos

Yummy way to eat your spinach. Note: This makes 6 burritos. How many you eat is up to you.

Ingredients

1/2 c Chopped onion
2 Garlic cloves, minced
2 tsp Margarine or butter
1 package (10 oz) frozen spinach, thawed and drained.
1/8 tsp Pepper
6 Tortillas (10 inch)
3/4 cup Picante sauce, divided
2 cups (8 oz) shredded cheddar cheese, divided.

Preparation

Grease a 9 x 13 inch baking dish. Preheat oven to 350 degrees.

Sauté onion and garlic in margarine until tender. Add spinach and pepper; cook for two to three minutes or until heated.

Place three tablespoons of the mixture on each tortilla, top with one tablespoon picante sauce and two tablespoons cheese. Roll and place seam side down in baking dish.

Once all burritos are assembled and in dish, top with remaining picante sauce and cheese. Bake uncovered for 20 to 25 minutes, or until sauce is bubbly and cheese is melted.
