Quiche Lorraine

Family recipe slightly modified by me

Great for any meal of the day!

Ingredients

1 Unbaked 9-inch pie shell

6 slices Bacon

1/2 c. Chopped onion

1 1/2 (6 oz) shredded Swiss cheese

1 1/2 c. (12 fluid oz can) Evaporated milk

3 Eggs, well beaten

1/4 tsp Salt

1/8 tsp Ground black pepper

1/8 tsp Ground nutmeg

Preparation

Preheat oven to 350 degrees.

Cook bacon in large skillet until crispy. Remove from pan and crumble. Put aside.

Saute onion in about 1 Tbsp of bacon drippings until clear.

Sprinkle cheese on bottom of pie plate. Top with bacon and onions.

Combine evaporated milk, eggs, salt, pepper and nutmeg in small bowl until well blended. Carefully pour into pie shell.

Bake for 30-35 minutes or until knife inserted halfway between center and edge comes out clean. Cool for 5 minutes on wire rack before serving.

Cook's Notes

Note: For a lower fat quiche use skim evaporated milk and low fat swiss. You can also makes this recipe crustless to cut calories even more.
